Turkey Cassserole

If you are like me, you often don't know what to do with leftover turkey.  Here is a recipe that even my son liked.


Cut turkey (or chicken) into bite size pieces.  saute 1/2 cup chopped celery and 1/2 cup chopped onions in 1/4 cup butter or margarine.  Mix togehter chicken, the sauteed vegetables, salt and pepper to taste, 1 can cream of chicken soup (I used cream of mushroom), 1/2 cup of sour cream and 2 cups of cooked rice (I used noodles!),  Place in greased casserole dish.  Grate sharp cheese on top.  Bake 400 degrees for 20 minutes uncovered.
